Ingredients

Here's what you'll need

15g Digestives Biscuits Plain
15g Nutella
60g Ricotta Light
8g Monkfruit Sweetener (Lakanto)
10g Butter (Light)
100ml Skim Milk
2g Cocoa Powder
4g Gelatine Powder

Directions

Follow these instructions

1. In a food processor (or just under a tea towel with a rolling pin) crush your digestive biscuits into a fine sand- like consistency
2. Melt the butter and mix it into the crushed biscuits
3. Press this mixture into a ramekin or whatever you’re going to set your cheesecake in
4. In a pot put the gelatin powder and the milk and whisk.
5. Mix in the ricotta, monk fruit sweetener, cocoa and Nutella, and place over a medium heat just until it starts to boil
6. Pour the mixture into your ramekin with the base already in the bottom
7. Leave this to set in the fridge for at least 4 hours
